Step-by-step in your kitchen

  1. Step 1

    Prep brinjal

    Cube brinjal; optionally salt and rest to reduce bitterness, then pat dry.

  2. Step 2

    Toast the powder

    In little oil on low heat, lightly roast Ojas Vangibath Powder until aromatic. Remove and set aside.

  3. Step 3

    Cook vegetables

    Fry brinjal until golden; add onion if you like, then tamarind paste and a touch of jaggery.

  4. Step 4

    Fold in rice

    Mix in cooled cooked rice and the toasted powder. Toss on low heat until every grain is coated.
